Yummy yummy #BlackBeanBrownies 
Here’s the recipe I demonstrated during the @tdashow 

Ingredients
- 1/3 C of Coconut Oil
– 1/2 C of Maple Syrup
– 1/3 C Tbsp of Cacao Powder
– 2/3 C of Blanched Almond Meal
– 1/4 C of Rolled GF Oats (Omit and replace with2 Tbsp of Ground Flax seed for a fudgier brownie)
– 1 Tsp of Vanilla
– 1 Tsp of Baking Powder
– 1/2 Tsp of Sea Salt
– 1 C of chocolate chips divided in 2/3 C and 1/3 C

Directions
- Preheat oven to 350′ F
– Using a food processor or blender throw in the coconut oil, maple syrup, sugar and beans. Pulse or blend till smooth.
– Add the cacao powder, the vanilla, baking powder and sea salt and pulse a couple times more.
– Last, add the almond flour and rolled oats and pulse again. There’s no need to grind the oats entirely, chopping them up is enough.
– If using a food processor, remove the blade and add in the 2/3 C of chocolate chips. Mix with a spatula. If using a blender you can transfer the batter to a bowl and add the chocolate chips or simply transfer the batter to the mold and mix all ingredients in it.
– Using a 8×8″ square mold, transfer the batter and add the last 1/3 C of chocolate chips on top for decoration and extra fudge.
– Bake the brownies for 35 minutes.

It takes 10 minutes or less to recreate this soup. It’s main ingredient #avocado is a #superfruit great for mommas and babies due to its high content of folic acid. Also rich in vitamin B, potassium and Omega3s.

This year is turning better every day that passes. Or maybe I’m making the best of it as it goes. At the end it’s all about how we see our reality, and our perception of our own life. Right? 

This month I joined the @matthewkenneyculinary online school. I’m taking the #Raw Fundamental Course. This academy focuses on the creation of high quality living foods and cuisine presented in a beautiful and innovative way, designed to inspire. I’m so excited and thankful to have this opportunity, this is what I talk about and think about all day. I’m even dreaming with knives and vegetables. And when I wake up I just can’t wait to get into the kitchen right away. 

I’m gonna be documenting my progress through photos here on Insta. From Day 1 till the end of this transforming journey. 

Here’s Day 1. Starting off with a Herbal Juice blended with parsley, cilantro, celery, cucumber, lemon, and apples. #rawoctoberwithMK

The recipe is on my blog and if you want to spike the dough with greens and other veggies, simply chop the vegetables in a food processor and add them to the dough.

My sister is allergic to something that causes a skin reaction. We are not sure what it is, but by doing the elimination “diet” we’ve been seen results. We are trying to figure out what she is allergic to. She dropped out nuts, gluten, and citrus and already carries a vegan diet. 

Reason why I made these #nutfree granola squares from @yvonne_deliciously_vegan phone app #myeclectickitchen. Her original recipe calls for peanut butter and slivered almonds. I used instead tahini and black sesame seeds. 

Her instructions were easy to follow, and it is so convenient to have it on the phone. The phone app is fun to navigate and makes you wanna jump in the kitchen after seen her amazing creations.

Vegan Corn Arepas πŸ’›πŸ’™β€οΈ

This recipe is for “mi Tierra querida” for Colombia. Three weeks ago I went back to Colombia and got reminded of what it means to be part of this beautiful country. We are a society that grew up being realistic instead of positive, that has seen injustice, blood and a cruel reality occur in our direct environments.
Pain built us, and it surely made us stronger. That’s part of our history, our past but that does not dictate our vision and goals. Our present is love, passion, warmth, unity, and happiness. A country that’s in love with its people and its traditions. A country that is family oriented, that’s humble, hard working and strives to survive very single day. 
But the best of it all is our ability to dance, to enjoy a party in unison no matter your age or gender. A party is a festival not matter its size, you are not there to impress, you are there to dance. 
And that energy, that drive to enjoy the moment, to be in the moment, makes of Colombia one of the happiest countries in the world —statistically proven. 
I am so happy and proud to be reminded where I come from.
