#Cauliflower Taquitos!

I used ground cauliflower, chopped apples, and spinach. I cooked them in coconut aminos and balsamic vinegar. Seasoned with garlic powder, sea salt, parsley and basil. On the plate, I added raw tomatoes and more cubed apples. 

We were really surprised with the texture the cauliflower gave us. It almost tasted and felt as if eating a ground seitan or crumbled tempeh. 

It was filling, different, and very tasty! ❀️

Creamy delicious Mushroom Soup. πŸ„πŸƒ

I remembered the time I tried following a recipe from a book to make mushroom soup and that thing it was not very successful. 

Yesterday, my daughter took all the mushrooms from the fridge and in a matter of seconds she made a mess all across the floor. I took that as the initiative to create something with mushrooms. So the memory of the burnt mushroom soup came to my head, and I took the challenge of recreating the soup, this time using my own methods. 

I used onions, garlic, rosemary, potatoes, and water. Heated and sautéed in 2 Tbsp of coconut oil those ingredients, then I rinsed the mushrooms and added to a blender with the other ingredients. I blended it all, and ta-da! Dinner was served πŸ‘Œ

The both of us eat a bowl of soup paired up with an #ezequiel toast with hummus-cheese spread. 

All vegan, all easy to make, all done in a matter of 15 minutes.

Creamy delicious Mushroom Soup. πŸ„πŸƒ

Savory #Garbanzo Pancakes layered between mashed avocado and sautéed beans with kale, peppers and spices. Topped with homemade marinara sauce. ❀️

Recipe
- 1 C of Garbanzo Flour
- 1 C of Water
- 2 Flax Eggs
- 2 Tbsp of Coconut Oil
- 1 Tsp of Salt
- 1 Tsp of Baking Powder

Mix all ingredients together. Whisk enough to achieve a smooth batter. Heat skillet to medium heat, drizzle with coconut oil, pour 1/4 C of batter. Let it cook enough till it starts bubbling up —around 4 minutes, flip and cook for 4 min more.

This time it’s almond meal pizza crust. This recipe is already uploaded on my blog if you’d like to recreate it. It’s under “Almond Meal Pizza Crust”

β˜€οΈ Recipe
- 3 Tbsp of Ground Flax Seed
– 1/2 C of Water
– 1/2 C of Brown Rice Flour
– 1 C of Almond Meal
– 1/4 C of Coconut Oil
- 1 Tsp of Sea Salt
– Spices of Choice 1 Tsp each

Directions
- Mix all ingredients in a food processor or by hand.
– Line a pizza tray with parchment paper and spread dough. The dough will be sticky, that’s ok.
– Bake for 35 min at 375′ F
- When done add toppings and bake again at 400’F for 10 min

You can’t tell there’s cauliflower in the crust. It holds together perfectly and it pairs up great with the veggies and #homemade tomato sauce. 

For the crust I used a blend of ground cauliflower, brown rice flour, flax seed, nutritional yeast and coconut oil. 

For the tomato sauce or #ketchup, I used as reference @yvonne_deliciously_vegan ketchup recipe from her #EclecticKitchen phone app. Although, I used whole peeled tomatoes instead of canned ones, and added potato starch to make it thicker. But her spice blend for this recipe was on point! πŸ‘Œ

Many think that baking gluten free isn’t as easy as it is to bake with wheat flour. Or that it’s not possible to get the same results. What happens when baking gluten free is that we are replacing other grains and blending different gluten free flours to imitate the protein binding properties of gluten. Yes, it takes a bit of practice, but it is possible! 

For these classic and vegan #chocolatechipcookies I used a blend of gluten free oat flour and garbanzo flour, oat flour is a sticky flour that helps bind the bake good, and garbanzo is high in protein which compensates for the absence of gluten in this recipe. 

#Gluten has become our enemy because the #wheat we are consuming nowadays, it’s not purely wheat. It’s more of a blend of grasses and other wheat looking plants which gluten has been enriched to create better looking and long lasting bake-goods. It affects us because it becomes indigestible.
